I am a big fan of easy meals in the kitchen that are also healthy and full of flavor.
This is something I put together – nothing fancy but I hope you will enjoy it!
Chop up yellow, red and/or orange peppers. Chop up cucumbers. I used corn on the cob and steamed in the microwave prior to cutting off the cob. This can be made ahead and time and stored in the refrigerator.
For this lunch, I added Good Culture Whole Milk Cottage Cheese which is fantastic if you have never tried!
I drizzled with olive oil and added salt, pepper, and some crushed red pepper to taste.
